These frozen cheesy chicken burritos are perfect for meal prep, packed with flavor and ready to eat when you are.

Ingredients

  • 400g boneless skinless chicken thighs
  • 1 taco seasoning pack
  • 2 limes
  • 200ml chicken bouillon
  • 400g green enchilada sauce or pelati (crushed tomatoes)
  • 100g rice
  • 1 jalapeno, diced
  • 1 onion, diced
  • 1 bunch cilantro, chopped
  • 160g Greek yogurt
  • 50g cheddar cheese, shredded
  • 40g mozzarella cheese, shredded
  • Garlic to taste
  • 5 tortillas

Instructions

  1. Add the chicken, taco seasoning, chicken bouillon, and green enchilada sauce (or pelati) to a slow cooker.
  2. Squeeze the juice of 1 lime into the mixture.
  3. Cook on low heat for about 3-4 hours.
  4. After the cooking time, add the rice and cook for an additional 20 minutes or until the rice is fully cooked.
  5. Add the diced jalapenos, onion, and cilantro to the mixture.
  6. Stir in the Greek yogurt, cheddar, mozzarella, and garlic. Season to taste with salt.
  7. Mix well to combine all the ingredients.
  8. Fill the tortillas with the mixture and roll them up into burritos.
