
These frozen cheesy chicken burritos are perfect for meal prep, packed with flavor and ready to eat when you are.
Ingredients
- 400g boneless skinless chicken thighs
- 1 taco seasoning pack
- 2 limes
- 200ml chicken bouillon
- 400g green enchilada sauce or pelati (crushed tomatoes)
- 100g rice
- 1 jalapeno, diced
- 1 onion, diced
- 1 bunch cilantro, chopped
- 160g Greek yogurt
- 50g cheddar cheese, shredded
- 40g mozzarella cheese, shredded
- Garlic to taste
- 5 tortillas
Instructions
- Add the chicken, taco seasoning, chicken bouillon, and green enchilada sauce (or pelati) to a slow cooker.
- Squeeze the juice of 1 lime into the mixture.
- Cook on low heat for about 3-4 hours.
- After the cooking time, add the rice and cook for an additional 20 minutes or until the rice is fully cooked.
- Add the diced jalapenos, onion, and cilantro to the mixture.
- Stir in the Greek yogurt, cheddar, mozzarella, and garlic. Season to taste with salt.
- Mix well to combine all the ingredients.
- Fill the tortillas with the mixture and roll them up into burritos.
