A rich, warming vegan ramen with miso broth and hearty shiitake mushrooms, perfect for cozy dinners.

Ingredients

  • ½ onion
  • 1½ garlic cloves
  • 15g ginger
  • ½ chili
  • 100g fresh shiitake mushrooms (or 60g dried)
  • 2 EL sesame oil
  • 2 EL soy sauce
  • 1½ EL mirin (or 60ml)
  • 0.9l vegetable broth
  • 15g light miso paste
  • 100g unsweetened soja drink

Instructions

  1. Grate onion, garlic and ginger.
  2. Quarter the shiitake mushrooms. If using dried ones, hydrate first with boiling water for 15 minutes.
  3. Put sesame oil in a big pan, add onion, garlic and ginger, and sauté for 2 minutes.
  4. Add the chili, ⅓ of the mushrooms, soy sauce and mirin. Steam for 1 minute.
  5. Add the broth and let it boil. Let cook for 30 minutes on low heat.
