
A rich, warming vegan ramen with miso broth and hearty shiitake mushrooms, perfect for cozy dinners.
Ingredients
- ½ onion
- 1½ garlic cloves
- 15g ginger
- ½ chili
- 100g fresh shiitake mushrooms (or 60g dried)
- 2 EL sesame oil
- 2 EL soy sauce
- 1½ EL mirin (or 60ml)
- 0.9l vegetable broth
- 15g light miso paste
- 100g unsweetened soja drink
Instructions
- Grate onion, garlic and ginger.
- Quarter the shiitake mushrooms. If using dried ones, hydrate first with boiling water for 15 minutes.
- Put sesame oil in a big pan, add onion, garlic and ginger, and sauté for 2 minutes.
- Add the chili, ⅓ of the mushrooms, soy sauce and mirin. Steam for 1 minute.
- Add the broth and let it boil. Let cook for 30 minutes on low heat.
