Ingredients

  • 500g frozen peas
  • Salt
  • Lemon juice

Instructions

  1. Blanch the peas in salted water for 3 minutes.
  2. Blend the peas with a little water until smooth.
  3. Push the purée through a fine sieve for extra smoothness.
  4. Taste and season with salt and a splash of lemon juice.
  5. Cool as quickly as possible to preserve the bright green color.
