- 500g frozen peas
- Salt
- Lemon juice
Instructions
- Blanch the peas in salted water for 3 minutes.
- Blend the peas with a little water until smooth.
- Push the purée through a fine sieve for extra smoothness.
- Taste and season with salt and a splash of lemon juice.
- Cool as quickly as possible to preserve the bright green color.
